Start By Warming Up The Milk
To start the process of making cheese, you will have to use warm milk. You can either buy warm milk directly from a dairy farm the same day you will make it into cheese, or you can also warm the milk up on a kitchen stove who slowly convert it into cheese.
Add an Acid
Once the milk has warmed up enough, you can now acidify the milk. You can either use vinegar directly, or you can use a bacterial culture to eat the lactose in your milk. This lactose will be converted into lactic acid.
Coagulate The Milk
A coagulant like Rennet needs to be used in order to help the proteins in the milk join together. There are various different types of coagulants which you can choose from. After you add coagulant in the warm milk, it will convert into gel.
Once the milk has been sitting for a while, you can check the firmness of the gel by pressing it with your hand.
Cut And Wash The Gel
After a firm gel is made, you will have to cut the gel into smaller pieces. Size of the pieces you cut the gel in will determine the amount of moisture it retains in the long run.
After this, you should put the gel on a kitchen stove, and should let the bacteria do its job. Cooking the curd for longer will make the cheesy drier. Drain the whey after this process to obtain cheese.
Do Some Aging
After you get the cheese, you can press it down and salt it to age, or you can consume it right away.
